We found the same with our rosea when we had that cold snap, she would go and sit on the heatmat for a little while, and the thermostat was keeping the mat on for longer than it would normally have been. We didn't adjust the thermostat at all as it seemed to be struggling to keep the terrarium at the set temperature anyway.
I have read that the round type Exo Terra hygrometers and thermometers are relatively unreliable, so we take our readings with a pinch of salt, when we can afford it after Xmas we'll probably invest in the digital ones. I'm sure you're right though, in one of out Exo Terras the thermometer is quite near the heatmat and the temp always reads a little higher than the other one where the thermometer is on another wall.
